Product availability is set in two places: the availability type, in the product settings, and the slots themselves, in the calendar of each option.

Availability type

Open your product, then Settings in the product sidebar.

How do I set the availability of a product

Availability required states whether a specific date or time is needed to book the product.

Availability type offers two choices: start times, for an activity that begins at a fixed time, or opening hours, for an offer available throughout a time range.

Click Save: the change applies immediately.

Slots

The days and times you sell are then defined per option, under Options (calendar and pricing), in the Calendar tab, with the Add availability button.
